Ingredients:
- 2 lbs stew meat, cubed
- 1 tablespoon coconut oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 can diced tomatoes (14 oz)
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 cups chopped kale
Instructions:
- Heat coconut oil in a large skillet over medium-high heat. Add stew meat and brown on all sides.
- Add onions and garlic to the skillet and cook until the onions are translucent.
- Pour in the beef broth and bring to a simmer.
- Add the diced tomatoes, tomato paste, thyme, rosemary, paprika, salt, and pepper. Stir to combine.
- Cover the skillet with a lid and let the stew simmer for 1 to 1 1/2 hours or until the meat is tender.
