Keep the family warm this winter with this delicious chicken and chorizo bake. I have been making variations on this theme ever since I started employing a steam oven (well, even before that in my regular oven, though it's far better wiped out the combi steam oven). the first idea for this particular marriage of flavors came from Nigel Slater – I can’t find a web link anymore but have a hand scrawled recipe for something titled Pumpkin Pan Fry which originally used bacon instead of sausage.

And that I know we just talked about Mr Slater and his recipes a few of weeks ago, but what am I able to say, I even have a food crush on the person. Eventually count I had 8 of his books in my collection, this one is my most cooked from but they’re all great. If you don’t own any of his titles I highly recommend them for both recipes and delightful writing.

As I said earlier, this is often very adaptable. Don’t like pumpkin? Use sweet potatoes, regular potatoes, or cauliflower. Want something green? Add a couple of green beans or broccoli. you'll swap in bacon or pancetta for the chorizo, pork chops or maybe fish for the chicken…hopefully you get the thought . For the quantities below i exploit both of my oven’s solid chrome steel trays, as cramming it all onto one means everything stews and you don’t get the great crispy edges which make the dish so good. Investing during a second full-size tray has been really worthwhile on behalf of me , i exploit it all the time (you can buy all manner of various sizes and depths do you have to wish, but my other is simply a rather deeper version of the one which came with my oven - almost like this).  The ingredient of Baked Chicken With Pumpkin And Chorizo

  • 1 4 cup olive oil divided
  • 1 2 chorizo 60g diced divided
  • 8 coles rspca approved australian chicken thigh fillets
  • 400g kent pumpkin peeled seeded cut into 2cm pieces
  • 1 250g swede peeled cut into 1 5cm pieces 250g
  • 1 150g carrot peeled cut into 2cm pieces
  • 2 garlic cloves sliced
  • 2 tsp chopped thyme
  • 1 1 4 cups 310ml chicken stock
  • 3 4 cup panko breadcrumbs
  • 1 4 cup 50g pepitas pumpkin seeds coarsely chopped
  • 1 tbs flat leaf parsley leaves
  • 1 tsp chopped thyme extra


The Instruction of baked chicken with pumpkin and chorizo

  1. Preheat oven to 220c - 200c fan forced heat a large heavy frying pan over medium high heat add 2 tbs of the oil and half the chorizo cook stirring for 3 mins or until crisp using a slotted spoon transfer the chorizo to a 23cm x 33cm baking dish season the chicken well with salt and pepper.
  2. Add half the chicken to the frying pan and cook turning once for 6 mins or until golden brown all over transfer to the baking dish repeat with the remaining chicken.
  3. Pour off all but 2 tsp of the oil from the frying pan add the pumpkin swede carrot garlic and thyme to the pan.
  4. Cook for 6 mins or until the vegetables are caramelized and beginning to soften add the stock and bring to a simmer pour the mixture into the baking dish
  5. In a small bowl mix breadcrumbs pepitas remaining 1 tbs of the oil and remaining chorizo sprinkle the breadcrumb mixture over the chicken and vegetables in the baking dish.
  6. Bake for 20 mins or until the mixture is bubbling and breadcrumb topping is crisp and golden brown set aside for 5 mins to cool slightly sprinkle with parsley and extra thyme.
