INGREDIENTS:
For the cake:

  • 2 carrots
  • 1/4 cup (50ml) orange juice

  • 3/4 cup (150gr) brown sugar
  • 1+¾ cup (220gr) rice flour

  • 2 tsp baking powder

  • pinch of salt

For the frosting:

  • 1 can coconut cream
  • 1 tbsp sweetener of your choice

INSTRUCTIONS:
For the cake:

  1. Shred the carrots and put them aside.
  2. Squeeze the juice of 1/2 an orange. You'll need 50 ml of that.
  3. Drain the canned chickpeas and save the water in a glass. You'll need 75 ml of that. You can freeze the remaining liquid and use it for another cake.
  4. Mix the dry ingredients in a bowl and the wet ingredients in a separate bowl.
  5. Pour the wet mixture into the dry one while stirring with a spoon. Lastly add your shredded carrots and stir well.
  6. Pop in the oven at 180ºC (350 Fº) for 35-40 minutes.

For the frosting:

  1. Put the can of coconut cream in fridge and let it sit overnight.
  2. Make sure to only scoop out the thick cream out of the can and leave out the liquid. Use a spoon to do this.
  3. Put the coconut cream in a bowl with 1 tbsp of sweetener and stir.
  4. Make sure the cake has cooled down when you spread the coconut frosting on top. Otherwise the frosting will melt. Decorate with toppings of your choice.
